The custodians of the Etna vineyards is a constantly evolving wine reality, in one of the most characteristic areas of Sicily: the Etna one. Volcanic soil, the minerality of the soil, the cold of the mountain and the sun of Sicily merge with the hands and mules of the "vigni", the Etnean winemakers who have been cultivating the historic vines of the territory for centuries in a natural way, without chemistry and In compliance with the environment, collected today in a consortium promoted by Salvo Foti, winemaker of the cellar who made this ancient association reborn. of the volcano. The vineyards, many with more than one hundred years of life, are cultivated with sapling on lava and dry soils, with high density per hectare and quintconx system, that is, each screw has the same distance from those around it. The ancient lava stone terraces help the drainage of rainwater and guarantee good ventilation, essential in hot summer. The vines struggle to survive in these sandy soils, but the result is a very rich fruit, of great balance and acidity, tended to be gradually late. Attention to the vineyard can only reflect on the same way on wines. The custodians of the Etna vineyards use indigenous yeasts and their wines really keep all the peculiarities of the Etna terroir. The result is a range of Etnei red, white and rosé wines, fruity, fresh and juicy, full of balance, exactly like the large territory they represent and of which the secrets are kept.
