Cos of Estournel is Second Cru Classé de Saint-Estèphe, which is located in the northern area of ​​the Médoc. The COS name derives from an expression of the ancient language of the Gascogne, which means pebble hill and perfectly describes the characteristics of the terroir. The central area of ​​the vineyard is located on a deep gravel plateau, from which two sides, one with a revolt and south exposure and the other to the east, on lands made up of mixed gravel clay. A deep vein of clay crosses the subsoil of the Domaine, guaranteeing a natural water reserve. An accurate study of the territory has made it possible to know the peculiarities of each individual parcel and to manage the estate with extreme care and meticulous attention to the details, in full respect of the surrounding environment.ing the pedoclimatic vocation of the estate, the Merlot was planted with exposure to east, cooler and on clay-claccarial land. On the contrary, the Cabernet Sauvignon was planted in the highest area of ​​the hill, on very drained pebbles and in a more sunny and hot position, which allows complete maturation of the grapes. Thanks to these choices, each grape can express itself in the most suitable terroir and reach the highest expressive level, with rich and elegant aromas. Each single parcel is followed carefully in the ripening path of the bunches, up to the moment of the harvest. The area also enjoys a particularly favorable climate. Saint-Estèphe is the most northern appellation of the Mèdoc and is located on the border with the girond estuary and a few kilometers of the Atlantic Ocean coasts. In this area the influence of the maritime climate is more marked. The breezes of the ocean mitigate the temperatures avoiding too high thermal changes. The vineyards suffer less the summer heat and are sheltered from the risk of spring frosts. The grapes ripen slowly, they arrive in healthy harvest and with intense aromatic equipment. The estate extends over 100 hectares, grown for 2/3 with Cabernet Sauvignon and for the remaining third with Merlot, Cabernet Franc and Petit Verdot. The average age of the vineyards is 45 years old, but inside the Domain there are also precious old vineyards of 80-100 years, true heritage to be protected with loving care. These are these ancient vines, which give the wines the structure, depth and complexity that make them unique. It is no coincidence that the first Domaine wine is made only with grapes from vineyards of over 55 years of age.
